Cracked Wheat and Nectarine Salad


I enjoyed this salad for three days this week for lunch. It was easy to make on Sunday evening and stored in a large tupperware container for the week!


1 cup uncooked bulgar (found in bulk section at your grocer)

1 cup boiling water

About 3 diced or sliced nectarines (your preference)

1/4 cup fresh flat-leaf parsley

3 tbsp olive oil

3 tbsp balsamic vinegar

3/4 tsp salt

1/4 tsp black pepper

3 tbsp pistachios


Combine bulgar and boiling water in a large bowl, cover and let stand for 45min to an hour. Stir in nectarines and all other ingredients except nuts. Toss well. Sprinkle nuts on top.
