Serious Muffins


This recipe is from a wonderful local cookbook that I highly recommend; Good Food, Great Medicine by Mia and Miles Hassell, MD.
Makes 12 muffins, 1/2 cup size
3/4 cup flaxseed meal
1 1/4 cup whole wheat pastry flour
2tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/4 tsp ground cloves
1 cup chopped walnuts (optional)
1 cup golden raisins (optional)
2 eggs
1/2 cup plain yogurt
1/2 cup honey
2 raw carrots, finely grated (about 2 cups)
Preheat oven to 400 degrees, oil muffin tins and set aside.
Combine dry ingredients and mix. Stir in nuts and raisins if desired.
Whisk eggs, add yogurt and honey and whisk for about 30 seconds to dissolve honey.
Grate carrots on fine holes of grater, add to egg mixture and blend well.
Add dry ingredients into wet and blend. Scoop into muffin tins using a 1/3 cup measure. Fill 3/4 cup full. Bake for about 20 minutes. Cool on a wire rack.
