Perfect Summer Salad

For my version:
2 cucumbers, peeled, diced, most of the seeds removed
1/4-1/3 cup peanuts
1/4 cup large flake coconut (unsweetened), toasted
2 tbsp olive oil
2 tbsp fresh lemon juice
large handful of cilantro, finely chopped
dash of salt and pepper

Take the cucumber and cilantro and toss. When you are ready to eat, toss in peanuts and coconut. To toast the coconut I just use a foil lined toaster oven dish and watch carefully in the toaster oven until golden brown (careful it happens quickly and therefore burns quickly!).
In a separate bowl whisk together olive oil and lemon juice and add salt and pepper to taste. Dress the tossed ingredients to desired taste. Makes two meal size servings.
