Spinach!


With it's bright, vibrant green hues it is clear that spinach is packed with nutrients. A hint...your body is able to better absorb and utilize all those nutrients when the spinach is eaten very slightly wilted. To do this, simply drizzle a small amount (teaspoon or less) in a pan and drop the spinach on top. Toss gently until slightly wilted, the color will change a bit darker and appear wet maybe. This is not your great grandma's dull, limp spinach! This is a great side, or add some white beans and make it a great nutrition packed lunch.
