Meatless Main Dish!
I encourage folks to try meatless meals once a week! Here is a great alternative to a tradional family meal, meatless tacos!
My sister found these great pre-cooked lentils at Trader Joes.
There are the perfect alternative to ground beef! They have a similar texture and perfectly season with a traditional taco seasoning packet. We also used some fresh diced onions to flavor. So just dice the onions and put them in a pan and then follow your taco seasoning packet for the rest.
We had a combination of tortillas available as we had guests over, original flour (not the best choice) and a nice soft corn (provides smaller portions and this brand is from Fred Meyer and has very few ingredients/preservatives) and hard corn shells (easy to find and low fat typically). We used the usual toppings, diced red peppers, avocado, olives, shredded lettuce and a little sharp cheddar cheese. I also used the yummy avocado dip (see previous post) instead of sour cream! Give it a try, I think you will really like it!
