Orzo Salad for jars!
As most of you know, I love to plan ahead and make both breakfast and lunches I can grab on the go especially for my work days. I love to make ahead jarred salads. This was one I tried a few weeks ago. It was really pretty with the jewels of the dried cherry red color peaking out from the orzo and spinach. Since orzo is a hearty pasta it holds up to being tossed with the dressing even a few days ahead of time. Unfortunately I didn't snag a picture before I jarred the salad, but it looks somewhat like this!
1/3 cup dried cherries
3 cups fresh spinach, chopped
1/3 cup pistachios
1/8 cup white balsamic vinegar
1/8 cup olive oil
Salt and pepper to taste
Whisk vinegar, olive oil, salt and pepper to creamy dressing.
Cook orzo per package instructions. Drain and cool. Once cooled completely, toss cherries, pistachios, spinach together until well mixed. Toss with dressing. Put in jars and refrigerate until ready to eat.
2-3 servings depending on how much you want in each jar.
