Mushroom Red Sauce
This is more of an idea than a recipe. I will give you the basics and you can get creative! This sauce can be used over any kind of pasta, grain, or even to top polenta or potatoes!
I was making spaghetti dinner for my family and didn't want meat sauce myself. I took an 8oz package of sliced cremini mushrooms and put in a small sauce pan. Cremini mushrooms are like baby portabella mushrooms and have more flavor than typical white button mushrooms. I added about 1-2 tablespoons of butter. If you are avoiding animal products entirely, you can use oil. I sautéed them on medium high. Mushrooms release juices once heated so they will go from dry to very wet quickly along with the butter. It is about this time that I added nearly a tablespoon of italian seasoning! The liquid adds to the butter and then has to cook out so it can take up to 10-15 minutes for that process depending on your heat source. Once the liquid has reduced by about half I added approximately 3/4 cup tomato sauce and 1/4 cup of a jarred tomato/basil sauce. You could just add only tomato sauce and add more spices and garlic to your desired taste. Simmer for another 10 minutes and then serve! (This recipe makes about 2 cups of sauce total so double for family or larger crowds)
