Creamy Tomato Barley "Risotto"
This recipe is again from the vegan blog "Oh She Glows". It is time consuming but ultimately worth the time and very delicious. I like to make this on the weekends when I have more time to cook and use the leftovers for lunches during the first part of the week. The original recipe suggests a shorter cooking time, I would recommend at least and hour and 20 minutes of simmer time with frequent stirring and even up to 2 hours. You may need to add a bit more liquid such as vegetable broth.
