Yumm Bowl
Using the sauce in the previous post...this is a delicious, meat free dinner that is colorful, healthy, filling and delicious!
You can use whatever toppings sound yummiest to you, here is what I do:
Grape tomatoes, halved
Red or orange peppers, diced
Frozen or fresh corn, thawed
Avocado, diced
Spinach, chopped finely
Black beans, drained and rinsed well
Sliced black olives, drained
Toppings are fun lined over about 3/4 cup of brown rice. Use about 1-2 tablespoons of Yumm sauce on the top.
