Chocolate Cherry Cookies!
It's always nice to have a sweet treat that is semi-healthy. The January/February issue of Cooking Light 2010 called these cookies "heart smart". Cookies of course need eggs, sugar, things you might not think of as heart smart necessarily. The reason this title works on these cookies is the ingredients in addition to the eggs and sugar...the oats which are a great source of fiber and can lower cholesterol, the dried cherries and chocolate which both have flavanoids or anti-oxidants that protect against multiple diseases including heart disease.
1/3 cup all-purpose flour
1/3 cup whole wheat flour
1 1/2 cup old fashioned rolled oats
1 tsp baking soda
1/2 tsp salt
6 tbsp unsalted butter
3/4 cup packed light brown sugar
1 cup dried cherries*
1 tsp vanilla extract
1 large egg, lightly beaten
3 oz. bittersweet chocolate, coursely chopped
- Preheat oven to 350 degrees
- Combine flours, oats, baking soda, and salt in a large mixing bowl; stir with a whisk.
- Melt butter in a small saucepan over low heat. Remove once melted and add brown sugar and stir until smooth.
- Add the sugar mixture to the flour mixture, beat with a mixer at medium speed until well blended.
- Add cherries, vanilla, and egg; beat until combined.
- Fold in chocolate.
- Drop dough by spoonful onto prepared baking sheet either with cooking spray or silicone sheet.
- Bake 12 minutes or until almost firm.

*When choosing dried fruit it is best to buy organic because pesticides are concentrated when the fruit is dried.
