Lycopene


We often hear buzz words about antioxidants or other powerhouse phytochemicals. Lycopene has often been thought to be one of those powerhouses. Lycopene is most commonly found in red foods like tomatoes and watermelon. It has been shown in multiple studies that lycopene along with other phytochemicals can reduce the risk of some types of cancer, macular degeneration, and heart disease. A couple tips to absorb the most lycopene from your food include not refridgerating tomatoes or watermelon. The cooler temperatures decrease the amount of lycopene available and you can tell this by the decreased flavor in the fruit as well. Another way to get the most from your red food is pair it with a little fat. Drizzle olive oil on tomatoes lightly or try a watermelon salad with a touch of feta crumbles and mint.
