Pack Your Lunch!


A staple lunch recipe during my work week, it came from Everyday Food a few years back. It is quick and healthy and is very versatile.

  • 1/4 cup canned chickpeas
  • 1/2 cup quartered cherry tomatoes
  • 1/4 cup crumbled feta
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon dried oregano
  • 1/8 teaspoon salt
  • Ground pepper

  • This is a single serving, I often make larger quantities and eat it for 3 days in a row for lunch!
    Drain and rinse chickpeas. In a small bowl whisk together lemon juice, olive oil, oregano, salt and pepper. Combine chickpeas, tomatoes, and feta in a bowl. Pour liquid mixture over the top three ingredients and toss gently.
    You can put this in a whole wheat pita, or eat as a dip with homemade whole wheat pita chips, or simply eat as a salad with a fork.
